I thought that Jabber doesn't save the chat history, but apparently it does, in AppData.
But how can I access it and view it?

If you upgrade to 10.6, this will be easier. If chat logging is turned on, you will see the chats saved in HTML format and view it directly. In your case you can use SQLLITE

I am running Jabber 10.6.3 but the only file I see in in history folder is a DB file that I have to open using SQL Lite. Is there something that has to be setup so I can view it in HTML format

You can setup an external Oracle or PostGRES SQL database and build a compliance profile on the Presence server. This is working great for us.

In most IM/Chat apps, there is a way from within the Chat app to see the chat logs, rather than having to go OUTSIDE the app to get the chat logs. I'm new to Jabber and running version 11.6.0. Is there a way from within the Jabber App to see the logs? If not, I'm using a Mac. Where are the logs on the mac?

For windows only persistent chat rooms you can see the chat logs and search too. For regular 1: and group chat you can see the chat logs when you open a chat window for up to 99 messages or some number like that. Anything past that if logging is turned on on the client side is saved into a Jabber chats folder. Inside that folder you can search and pull those HTML files. This is again for windows

What is the case on a Mac..... Right now, I don't see chat info past the last time I started Jabber.

I don't have one to test but judging by this matrix it doesn't seem to have it

Thank you.
This is indeed unfortunate. I am a new hire and did not know this. I have lost some valuable information contained in the chats. It appears that from now on, I will have to copy the information out of the chats and save manually to my computer.
Wondering why they would leave out this important feature for Macs.......

If you use Outlook, there will be a folder called "Cisco Jabber Chats" under the Inbox that will have all of your Jabber chats in there from day one.
