Personally if possible Migrate from Like a Like Migration to another FMCv and do the upgrade, is this works?
so until the new setup working and tested, So the old one still working state.

My suggestion is - Build same version of vFMC on Cloud same version and do the testing, if required uplift, do upgrade process as per standdard.
Hope is this clear ? and for clarity we are only looking to Migrate FMC to cloud right ?
