Older TRCs are still officially supported for CUCM 10.5 correct ?

UCS B200 M2
The rules are below but hard to interpret if 100% supported:

Srini previous answers are correct. Cisco tests current versions of TRC/UCS products with current versions of ESXi with current versions of UCM (and the UC portfolio). As such, we do not test older versions of UCM with older TRC/UCS with older EXSi. For customers with a extensive VM deployed data center, their virtualization team will drive the move to a newer ESXi version. For customers with virtualization on just their TRC/UCS servers, the drive to newer ESXi is driven by newer features in ESXi as well as end of sales/support for older ESXi and the TRC itself.
Now back to your question....UCM 10.x has been tested with the following ESXi verisons
Since both your C210 and B200 are Medium TRC's, the support matrix indicates that those 'older' TRC's are also supported.
So with the given information, your existing hardware is supported for a UCM 10.0 deployment. But I would recommend that you look at updating your hardware platforms to keep current and leverage newer ESXi functionality (as indicated by Srini).

Yes see under end of sale TRC. Always pay attention however to two things
1) Memory - Not a problem with the larger TRC but with C200 M2 you have to be careful
2) ESX i compatibility. The older boxes don't support 5.5 and later which can be an issue. Consult the VMware ESXI compatibility matrix

Thanks for the input and advice!
Regarding ESXi I don't find the requirement to run 5.5 since applications support older versions (CUCM 10.x Supported Versions of VMware vSphere ESXi = 4.0 U4, 4.1 U2, 5.0 U1, 5.1, 5.5).
Is there something else that forces newer versions - or maybe it's just a customer standard that could come into play?

Customer standard, being current on VMware from a support perspective and finally using new features like for example low latency queuing that unity connection benefits from in 10.x and removes that extra core
So in the future you may miss out on new features that UC may potentially benefit from
