Hi Shobri,
In Site Admin -> Site Settings -> Common (dropdown), there is a checkbox for 'When scheduling a meeting, users can choose an alternate host'. It's usually enabled by default, but you can uncheck it and this should remove all hosts' ability to assign alternate hosts to their scheduled meetings.
